Vegan Herb Mayo

Ingredients
1/4 teaspoon sea salt
3/4 teaspoon cane sugar (or other sweetener)
1 teaspoon apple cider vinegar
1 teaspoon prepared yellow mustard
1/4 cup fresh lemon juice
1/2 cup chopped chives (firmly packed)
1 cup cilantro leaves and stems (firmly packed)
1 cup basil leaves (firmly packed)
1/4 cup extra-virgin olive oil
1/3 cup filtered water (plus more to thin out if desired)
1 cup raw unsalted cashews
Step by step
To soak the cashews, either cover with filtered water for 2 hours or cover with boiling water for 10 minutes, drain, and discard the soaking liquid. Do not use the soaking liquid to make the mayo.
Throw the ingredients into your KitchenAid® blender in the order listed and add the drained cashews. Secure the lid, remove the center lid cap, and insert the tamper. Blend on high for 30 to 60 seconds using the tamper to guide the ingredients through the blades until smooth and creamy.
You may need to stop the machine and scrape down the sides of the container so that you don’t get bits of cashew and other ingredients in the mayo when you pour the mayo out of the container.
