Ingredients
1/2 teaspoon salt
2 fresh mint leaves
2 garlic cloves (minced)
1 tablespoon lemon juice
2 tablespoons extra-virgin olive oil
2 to 3 tablespoons fresh dill (snipped)
1 1/2 cups plain Greek yogurt
1 large cucumber
Step by step
Peel cucumber; cut in half lengthwise and scoop out seeds.
Grate cucumber; squeeze between paper towels several times to remove excess moisture. Add all ingredients to a KitchenAid Food Processor.
Cover and process until blended. Serve, or cover and refrigerate overnight to blend flavors.
