Ingredients
¼ tsp. salt
½ tsp. cumin
1 clove garlic, minced
1 Tbsp. lime juice
2 Tbsp. mint, chopped
1 cup yogurt
1 small cucumber, peeled seeded and chopped
¼ cup cilantro, minced
Juice from 1 lime
1 tsp. cumin
⅛ tsp. cayenne
1 tsp. turmeric
2 tsp. coriander
2 tsp. paprika
4 cloves garlic, minced
2 Tbsp. ginger, minced
2 tsp. olive oil
1 cup yogurt
1 chicken, cut into pieces
Step by step
Combine ingredients in large bowl. Make incisions in chicken approximately ½-inch apart. Place chicken in 9" x 13" pan. Pour marinade over chicken and turn to coat. Cover and marinate 6-8 hours, up to overnight.
While chicken is marinating, combine Cucumber Raita ingredients in medium bowl. Refrigerate until ready to use.
Place the Smart Oven+ Grill Attachment in oven. Select GRILL Mode and preheat Grill to High heat setting.
Remove chicken from marinade and arrange evenly spaced on Grill. Grill for 30-40 minutes, turning every 10 minutes until internal temperature is 165°F. Some pieces may take longer to reach the recommended temperature, so remove from Grill in stages.
Serve immediately with Cucumber Raita.
